Baileys Cheesecake

Recipe Story

I devised this recipe about 10 years ago when i first met my husband who loves both Bailey's and cheesecake so i decided to combine the two and win his heart! Over the years it has been slightly adjusted until i acheived the end result which is now requested by friends everytime we have a dinner party!

Ingredients


250g packet chocolate Hobnobs, crushed
50g unsalted butter, melted
200ml Bailey's Irish Cream
330g Full Fat Cream Cheese
50g plain chocolate, melted
200ml double cream

Method


Stir together crushed biscuits and melted butter, use to line the base and sides of a 23cm flan tin, pressing down with the back of a metal spoon. Chill.

Beat the cream cheese until soft, add the Baileys and beat until mixed with the cheese.

Meanwhile, melt the chocolate in a bowl over a saucepan of water (making sure that the pan does not touch the water).

Whip the cream until in forms soft peaks.

Pour the melted chocolate into the cheese mixture and stir until evenly mixed in.

Gently fold in the whipped cream.

Pour onto the biscuit base and chill overnight.

Decorate with some piped whipped cream and chocolate coffee beans.

I have made this a few times now and have passed this recipe on to friends. It does taste better the following day. I absolutely love it.
