Recipe Story

First time I had this dish was when I joined secondary school. At school dinners we were served these rolls and they were not made in huge quantities, so it was pot luck, and i am glad that I had luck on my side most times. After leaving school and proceeding forward to further education, i nearly forgot about them. When I was expecting my first child, several years later, I had this amazing craving for these rolls and I tried, but alas could not contact anyone regarding the recipe. So one day, I sat down and really thought about the flavour and taste and analysed the ingredients the rolls consisted of, and came up with my own recipe. Lo and behold the ingredients I used created the same flavour and taste and fluffiness of the most craved bacon and cheese rolls. And to this day I make then often and they still pass the taste test. All my friends and families love them and they are now the traditional must at christmas meals and also every now and then for quick snacks.

Ingredients


12 lean streaky bacon rashers smoked or unsmoked.
250 gms strong cheddar cheese (grated)
28 gms self raising flour
1 large egg
1fluid oz milk or single cream
mixed herbs optional

pinch ground black pepper

Method


1. Preheat oven to 180C/gas mark 6
mix grated cheese, flour add herbs and mix gently break in the egg and bind all the ingredients gently, add the milk or cream towards the end making sure that the mixture is of pliable consisitency, if dry add more fluid, and if sloppy add a teaspoon of flour.
Place each rasher on a board add tablespoon of mixture at one end and roll into a log, making sure thast the end is tucked underneath the roll
place these rolls on a greased baking tray. place in oven for 15-20 mins, or till the souffle is peeking out from the ends of the bacon, and bacon is cooked. remove from the tray when hot and place on a serving dish. can be eaten hot or cold. Serve as a main meal or as a snack, and fresh green salad, either way, you will enjoy them.
