Pan Fried Cod with Red Pepper Salsa

Recipe Story

I very rarely follow recipes, and tend to cook whatever i have to hand. This came about as I caught the fishmonger before he left for the day, and the grocer happened to have the biggest pepper i have ever seen sat on his stall!

Ingredients


1 red pepper
1 onion
1 clove garlic - minced
1 chilli - finely sliced
half a lemon
approx 300g cod loin
knob of butter
olive oil

Method


Cut the pepper in half and rub with olive oil, roast in oven at roughly 200 until charred. remove skin and set aside.
Finely dice the onion and in a frying pan add a tbls of olive oil and saute the onions with the minced garlic and chopped chilli. In a heavy based frying pan, melt the butter over a high heat, season the cod loin with salt and pepper and place in butter. Cook for 4 minutes and turn heat down to medium cook for a further 4 minutes then turn to finish cooking - will need approx another 4 minutes.
Whilst the cod is cooking, dice the pepper and add to the onions. Squeeze over the lemon and leave to reduce down over a medium heat.
I serve this with suate potatos and broccoli, serving the cod with a generous spoonful of salsa on top.
