Recipe Story

This recipe is based on a traditional Guernsey recipe for Gauche Melee which has been adapted in various ways by local families over the years.

Some recipes use all suet, some half butter and some all butter. Some include Ginger or Cinnamon. I find that a healthy dose of rich Guernsey butter adds to the indulgence! and a splash of brandy to the sultanas the night before is just an added bonus!

Ingredients


4 lbs Apples
1 lb soft brown sugar
1 lb plain flour
1/2 lb Guernsey butter
1/2 lb sultanas
2 eggs
3tbs Brandy
tbs milk
pinch of salt

Method


Soak the sultanas preferably overnight in the brandy to plump up.

Cream the sugar,butter and flour together.

Add the eggs and milk and mix thouroughly.

Finally add the sultanas and mix again.

Pour into a lined rectangular tin and sprinkle the top of the mix well with demerara sugar (this makes the top all crunchy and delicious)

Place in the oven and cook on 160c for approximately 1 - 1 1/2 hours.

Serve ideally with lashings of Guernsey cream or as I prefer a big dollop of vanilla ice cream

I may be thick here, but I fail to see where the apples are included in this recipe!!!
