The Fine Beef Company

2008 Regional Finalist
Farm shop

Selling: Meats

Specialising in local pedigree beef, this Buckhinghamshire based delicatessen also offers a home delivery service for those not lucky enough to live close by. The herd is reared in the village, fed on a diet free from chemicals, and allowed to roam freely in the summer months. Cattle are slaughtered at a local abattoir, then hung on the bone for 30 to 55 days, although less time can be requested if preferred. There are five traditional pedigree breeds on the farm, including Dexter, Old English Longhorn, White Park and Aberdeen Angus. Choose from one of the wide range of traditional English cuts, or their many flavours of rare breed beef burgers on offer.

Polly's beef is simply the best! We have treated ourselves to fillet and rib roasts for special occasions and recently purchased some Dexter rump steaks to bar-b-que. They were unbelievably tender, the "don't need a knife to cut" texture of a fillet but with the amazing flavour of the rump. Polly works tirelessly to look after her herd with the highest standards and the same care is given to her customers. She is a very special young lady and a true food hero.

Polly loves and takes great care of her cows. She also treats the meat with great respect by hanging it long enough to make it the most delicious beef I have every tasted. In every way The Fine Beef Company delivers an outstanding product....Polly, you deserve to win.

Fantastic set up, really good quality tender beef and Polly is really friendly and helpful. Best fillet steak we have tasted anywhere. We add a little cream, cava and mustard to make a sauce and is better than you can get in any restaurant. Polly deserves this award.

With two young children (2 and 7) i can not say more than this is the meat I always chose to feed my kids. My 7 year old has always refused burgers but will eat "Polly burgers" and has told her friends mum that the spaghetti bolognese she had for tea was nice but "it wasn't Polly's mince was it because it didn't taste as good as Polly's" - that mum has now discovered The Fine Beef Company too !!!! The Fine Beef Company are a true local food hero.... we love The Fine Beef Company!!!!

What a company, the tastiest beef I have ever had, but what I love the best is being able to experiment with all those strange and wonderful cuts Polly has! What an absolute delight - she has to win hands down! PS. you have to try her 8 week hung beef...awesome

What makes this place so special is the "complete product", including the personal sales and service. I paid a visit to Polly at the Fine Beef Company before Christmas, looking for a wing/sirloin rib joint for our Christmas dinner. I'd seen her recommended on the UKTV Food website. I took home a beautiful well-hung 2-rib 3Kg joint for our family of four (with me and my son being particularly good eaters!) The joint had a decent layer of fat and had been chined - It was sheer perfection!! I am now a convert to the Fine Beef Company. I gave the joint a coating of freshly made Colemans mustard, followed bya sprinkling of flour. Laid it on two onion halves and a halved head of garlic (ribs down). In to the oven for 20mins at Fan 200C. Turned the heat down to Fan 175C and waited for the internal temperature to register 155F (on an American wireless thermometer from Weber) having basted two or three times. The joint was then removed from the oven and rested for 45 minutes under a foil tent on a pre-heated carving dish. The gravy made using half a glass of good Italian red wine and a little cornflower and vegetable water was superb. The beef carved really well and the taste was probably the best we've ever had, with a meltingly tender texture. The whole experience from reading about thye Fine Beef Company, to getting directions and walking on the farm, to having a joint selected by Polly (who appeared to know every joint, let alone every animal) to cooking and eating Fine Beef Company beef - was a sheer joy. Highly recommended

I have been eating beef from the Fine Beef Co for some time now. Popping to see Polly for Beef is not a short trip, there is the customary 30 minute update on the welfare of the animals, trips to see calves, discussions on the relative merits of the taste of individual animals and generally the state of small scale farming. This is a pleasure, the meat is fantastic and the enthusiasm and love for the product is infectious. There really is no way you get a better product from a nicer set of people. Give them a go. I hav had a magnificent jacobs ladder, a wing rib of beef which words can't do justice to and steaks of all sorts and sizes each a joy and my kids love the mince as it actually tastes of something.

The Fine Beef Company has to be everyone 'local hero'. They do everything we believe in so strongly as a family, if it wasnt for people like Polly, we would all be eating supermarket rubbish. We all admire you Polly, well done on getting this far, we are all sure you will win!See you on friday as usual.

Polly does a fantastic job. Her beef is in a word 'spectacular'. No doubt that she deserves the award. Good luck

Having been a vegetarian for many years I was a little nervous venturing back into the meat world. Polly's beef is the only meat I will eat, I can see where the animals are raised, what they are fed on and how they are nurtured first hand which has changed the way I feel about beef production, do you know how hard that woman works?!! She is an absolute star and deserves this award more than anyone else. Thank you so much Polly and good luck, your passion and love for your herd shine through.

My family and I adore steaks and burgers from The Fine Beef Co. Not only do they taste fantastic, we like to know we're eating 'happy meat'. Having seen how Polly cares for her herds, we know they've had a wonderful, natural life. Polly works extremely hard and really deserves this award.

trickynicky1 trickynicky1 Posted 26 Jun 2007 6:45 PM

Without a doubt the best beef I have EVER tasted and the customer service is out of this world, it doesnt get much better so simply has to be the winner!

Luken Luken Posted 25 Jun 2007 2:36 PM

I've been buying meat from The Fine Beef Company for over a year now and it's truly fine. You know how supermarket meat often has a metallic taste (fresh blood, yuk!)? What you get with Polly's beef is this incredible rich, almost gamey taste and texture. It's honestly the best beef I've ever had - and it's no more expensive than buying from a good butcher.

FoodySue FoodySue Posted 25 Jun 2007 12:23 PM

i NORMALLY have an intollerance to beef, so when Pollly told me about her beef i was a tad nervous about trying it, as you'd imagine. well, the taste was amazing..and the after effects? well, just a very content customer, with no ill effects whatsoever!!! our favourite products...apart from a dexter steak, has to be the beef burgers....absolutely heaven in a bun!!!!!

rahlady rahlady Posted 22 Jun 2007 3:47 PM

A chance local find - Polly rears Dexter and Longhorn beef with huge passion. They are (very well) hung slaughtered and butchered locally. Polly never tires of finding great ideas and evangelising about the less well known cuts (ever tried feather as a steak - wow!!!!) I could go on and on - a real star who loves to get her customers to meet the meat.
