In this recipe video, Catherine Fulvio shows you the secret to making the perfect Victoria sponge filling.
1) In a separate bowl or food blender, combine the mascarpone cheese with the unwhipped cream, limoncello and sugar. Whisk everything together until smooth and then stir in the roughly crushed raspberries.
2) Mix the lemon curd with the limoncello and use to spread over both layers of sponge.
3) Spread the mascarpone raspberry cream over one of the cakes and top with the second sponge.
