How to make fudge
Food writer, chef and television presenter, Gizzie Erskine shows how to make delicious buttery fudge.
Cook time: 15 minutes
Makes 36 pieces
275 g golden caster sugar, such as Billington's
100 g light muscovado sugar, such as Billington's
225 g clotted cream
½ tsp natural vanilla extract, Silver Spoon Cakecraft
1. Place all the ingredients in a large saucepan and heat gently, stirring until the sugar dissolves. Bring to the boil, cover and boil for 3 minutes. Uncover and continue to boil until the temperature reaches 116 C on a sugar thermometer.
2. Remove from the heat and beat until the mixture becomes thick and creamy. Pour into a greased 20 cm square tin. Leave for 30 minutes. Mark into squares with a knife and leave until set. Cut into pieces and store in an airtight container.

nope twice i tried this recipe with semi milk and twice the mixture well curdled!! i did it on a low heat !!
i've tried making fudge but it turns out crumbly and dry, any suggestions why this happens?
Just made this fudge, it's the easiest fudge ever, have made so many different recipes, and they never set!!! This is simply amazing.... easier with a thermometre, glad l bought mine!!!1 Christmas pressies sorted!

I really want to make this, but have NO idea what pan to use, any ideas would be really greateful. I only have my brother in laws light saucepans and dont want to ruin them, so need to buy one that doesnt cost a fortune. Ideas would be really welcome, and what type etc...I'm a bit clueless at this. Thank you, the recipe looks amazing!

Looks like a nice & simple recipe. Only problem is, there are no measurements given. How much Muscavado, Clotted Cream & Golden Caster Sugar should be used??
