Watch and learn, celebrity chef Aaron Craze demonstrates essential kitchen skills.

1. Cut the onion in half, making sure to go straight down the centre of the root to keep everything from falling apart.

2. Remove the skin.

3. With your fingers out the way, cut four slices into the onion - going almost to the end. Now cut down on the onion.

4. Repeat as necessary for the end piece.

be careful chopping onion in food processor. if you over chopped onions will turn into soupy mess and won't cook properly. secret is to pulse in quick bursts and keep checking.

Looks good and with a single onion doubtless the best way. But for a pasta sauce providing supper for four or more guests especially if as usual garlic and chilli are involved, by far the better way is to quarter the onions, half the chilli after deseeding, crush the garlic cloves by hitting a wide bladed knife on them with one's hand, the skin comes off easily, then put the three vegetables into a processor and pulse until the 'fine chopped' size is reached. Time involved ? Almost nothing !!

If you don't make horizontal cuts you end up with some long curved pieces rather than regular shaped cubes a the curved sides of the onion will not be cut up enough.

Why do you make the first horizontal cuts into the onion? Surely if you make the vertical cuts then the the final cuts the onion breaks into its natural layers and creates the pieces for you.
