How to make gnocchi

Fifteen graduate James Santrey shows how to make gnocchi in this instructional video.

Using a cloth to hold them, scoop the flesh out of just baked potatoes and pass them through a moolis or mash until smooth. Add a pinch of salt, pepper and nutmeg and then the egg yolks and flour. Mix together to form a smooth dough.

Dust your bench with flour then gently roll the dough into a long, thin sausage. Using a knife cut the gnocchi into your preferred size, then shape a little by hand to adjust. Keep the gnocchi on a floured tray until needed.
