Turning vegetables is a classic French way of presenting vegetables. Here, James Martin shows how to turn a mushroom

Place the blade of a knife against the top of a mushroom on a slight angle. Twist and turn the mushroom, making small incisions with the knife. Finish by Making a small, star-shaped indent in the centre of the mushroom.
