Lunch Boxes by Jennifer Joyce

It's easy to get stuck in a rut with school packed lunches, especially when many youngsters refuse to stray from their favourite sandwich fillings. This is where Jennifer Joyce comes to the rescue. Her book has one hundred lunch box ideas all guaranteed to inspire and motivate - sandwiches, snacks, salads, treats and make-ahead recipes.
All the recipes have been designed with both nutrition and variety in mind. Sandwiches include Pitta with Prawn and Celery Salad and Tuna, Sweetcorn and Spinach Roll. We especially liked the pink-hued Beetroot Dip with Parmesan for Barbie doll enthusiasts and the range of soy sauce themed noodle salads for little salt fiends.
Her make-ahead recipes cleverly focus on dinner ideas that produce leftovers for the next day's lunch. There are also weekly plans, shopping lists and everyday solutions to time management - this is clearly a book written by a parent for parents.
In fact, Jennifer did her research for this book by experimenting on her two sons. She acknowledges and thanks them for their truthfulness, which made it easy to know what did and didn't work.
