James Martin: Desserts
Helpful Tools
Warning - this book is not for the sugar shy. If a pudding verges on the restrained you can be sure that James will have elaborated it with spun sugar confection, sticky syrups and lashings of ice cream. Get ready to indulge your sweet tooth.
The book goes beyond desserts to include cakes, biscuits, pies and confectionary. It is in fact an ode to all things sweet. After whetting your appetite with warming nursery-food puds such as Spicy Plum Crumble and Sticky Toffee Pudding it goes on to a more sophisticated dinner party collection. Are you tempted by a glazed Delice au Cassis or Baked Chocolate Mousse with Candied Fennel Root? Next in the parade of gluttony come the tarts and flans: Gooseberry Crème Fraiche Tart, Truffle Torte, Fruit Mille-Feuille. These are immediately upstaged by the cakes and bakes, where some of James' creations become more sculpture than food. A Fire-and-Ice Cake ripples with tuille 'flames', buttercream 'ice' and a crown of flowers and fruit while a carrot cake erupts with glazed carrots, banana tuiles and shards of pulled sugar.
Whether you're looking for some comfort from a homely pudding or to wow your guests with fancy food-art, you will find it all here.
