Peter Gordon

Known for his fusion-style of cookery, embracing ingredients and methods from the Pacific Rim and far beyond, New Zealander Peter Gordon is head chef and co-owner at London's Providores and Tapa Room.

Peter started out working for the original Sugar Club in Wellington, New Zealand where he set up and ran the kitchens. He later came to Britain when the restaurant moved to Notting Hill in 1995, and later to Soho (1998). In 2001 he opened the now-hugely successful Providores.

Peter's food style, loosely called fusion, was initially inspired by a year travelling through South East Asia. His continued exploration of areas famed for their exotic cuisines continues to fuel his interest in rare and unusual ingredients, "I treat the world's culinary resources as one huge, exciting larder", he says. Recently Spain, China and Turkey have provided more inspiration.

Peter opened a restaurant, Dine by Peter Gordon in Auckland, New Zealand in 2005 in the 5 star Skycity Grand Hotel. He also consults for Air New Zealand, Tourism New Zealand, New Zealand Lamb, Foods from Spain, London's Gourmet Burger Kitchen, Istanbul's Changa restaurant and the Public restaurant in New York.

Peter features in Nigel Slater's and Jamie Oliver's series, and has appeared on UKTV Food's Great Food Live and Market Kitchen.
