Most versatile are heatproof models. The silicon blade won't melt or discolour even at high temperatures, nor will it damage non-stick surfaces. The flexible blade is square on one edge so you can get the point into pan corners where food might stick. Look for one with an extra-long flat wooden handle. It's comfortable to hold, stays cool, and is long enough to keep your hand away from the heat.
For removing every scrap of mixture from a jar, bowl or the crevices of a blender goblet, try a plastic spatula. They have a thin flexible blade with one rounded edge and one square, for poking into corners. The blades come in different widths and you should be able to choose from different length handles too.
A slightly spoon-shaped rubber spatula is good for spooning cake batters into tins and scraping out mixing bowls.
Like wooden spoons, old-fashioned wooden spatulas are indispensable. The slightly angled edge is perfect for scraping mixtures out of corners and leisurely pushing food around the pan, and the blunt edges won't scratch non-stick surfaces. They make useful salad servers as well.
