No matter how tempting it is to have an array of spice jars on display near the hob... heat, light and air will destroy their wonderful aromas.
Keep your spices out of harm's way in small airtight glass jars in a cool cupboard, or even in the fridge. Don't leave them in packets once they've been opened.
Better still, decant your spices into small containers kept inside in a special spice tin. You can buy spice tins from mail order companies and in stores selling Asian groceries.
Even if you store them correctly, spices eventually deteriorate. Buy them a little at a time and often - never more than you need for a couple of months.
It's generally thought a good idea to buy your spices from specialist shops, good health food shops or shops selling Asian or Middle Eastern groceries. Make sure the shop has a quick turnover and that the spices are stored properly.
It's definitely worth buying whole spices then grinding your own. They'll taste far fresher than pre-ground spices, and you'll have a chance to toast them before grinding, which brings out the flavour.
