Salt and pepper mills

There's a growing choice of peppercorns and coarse salt available today, and a wide range of stylish mills for grinding them. However, don't be misled by purely stylish mills - some of the most impressive-looking don't necessarily perform well.

A study reliable grinding mechanism is far more important than the casing. The best are made from stainless steel, high carbon steel or ceramic. Salt mills should have a ceramic or nylon mechanism - salt will eventually corrode a metal one.

Make sure you can adjust the grind from fine to coarse, and that the setting stays in place without slipping.

It's best to choose a mill large enough to hold at least 3-4 tablespoons of peppercorns, otherwise you'll be constantly refilling it.

As well as salt and pepper mills, it's fun to have extra ones filled with different spices. Add a burst of flavour with freshly ground allspice, juniper berries, cumin seeds or toasted coriander seeds.

If your mills are intended for the kitchen, it's better to have ones that are easy to wipe clean. Keep the stunning chrome and perspex models for the table.

To keep your mills in good working order, brush the mechanism clean whenever you refill them.
