Springform/Spring-clip tins

A springform tin is a clever solution to removing a fragile cake or moulded dessert from its container. With the clamp closed, the sides of a springform tin fit tightly around the base, sitting snugly in a groove designed to stop any leaks. Release the clip for the sides to spring gently away from the base, leaving behind a perfectly shaped cake.

To make things simple, you can serve your cake directly from the base. These tins are really handy for any dish that needs careful handling. Try using them for making cheesecakes, tortes, mousses and deep straight-sided pies.

Materials and size

The best springform tins are made from heavy-gauge aluminium with a dark non-stick surface. Some have special patterned base inserts which are great for presentation and for making speciality breads such as Kugelhopf. Springform tins also come in shiny tinned steel with a waffle-textured base designed to prevent sticking. The sizes used most often are 20cm, 23cm and 25cm.

Care

Look after your tins by drying them thoroughly to prevent rust. It's best to keep the base separate from the sides until completely dry.
