Soba noodles
Soba means 'next to' or 'close' in Japan, where these healthy noodles are traditionally presented as a gift to new neighbours.
There are three main types of soba: those made from exclusively from buckwheat flour, those made with a blend of wheat and buckwheat, and flavoured varieties, the best known of which is cha soba, made with the addition of green tea powder.

Often served cold or lukewarm, soba noodles are best with a hot thin sauce or soup incorporating flavourings such as soy sauce, mirin, spring onions and sesame seeds.
