Sage
If you love Italian food, you will enjoy experimenting with sage. It has a distinctive camphorous flavour the Italians enjoy matching with a wide variety of ingredients.
Sage comes in several varieties.
The Italians love adding fresh sage to butter sauces to accompany ravioli, veal, pork, liver and chicken.
It is good with barbecued meats, roast pork and goose, ham, cheese and tomatoes. Sage and onion stuffing for chicken is an old British favourite.
Cut fresh sage will keep for several days in a plastic bag in the fridge. Dried sage should be used within a year of purchase.
