Ricotta cheese

Ricotta, which means 'recooked' in Italian, is not technically a cheese but a by-product of cheese manufacture - and something that's relatively easy to produce in a home kitchen.

Versatile ricotta can be used in sweet and savoury dishes. In Umbria, the tangy salted version is served alongside rich cookies, but most people will prefer it stirred through pasta.

Keep ricotta in the lidded tub in which it was purchased, or another well-sealed plastic container, and store in the fridge.
