Preserved lemons
Preserved lemons are traditional favourites of Moroccan cooking, but are also often featured in modern fusion dishes.
The lemons are preserved by being packed in a jar with salt (often flavoured with herbs and spices).
Preserved lemons are typically used to flavour Moroccan stews or tagines, especially those made from chicken or fish. They can be finely chopped and added to grain dishes and salads.
Always ensure the preserved lemons are covered with plenty of lemon juice. Some manufacturers advise storing the jar in the fridge after opening, but if the lemons are covered in juice they should last for several weeks.
