Chinese five spice
A spice mix that captures the five basic flavours of Chinese cooking, sweet, sour, salty, savoury and bitter. It usually contains cinnamon, cloves, star anise and Sichuan pepper, though mixtures can vary.
A perfect pairing for duck, but use judiciously as the flavour is overpowering.
