Bream

There are several types of bream. The fish usually sold simply as 'bream' in the UK is classified as a freshwater fish, even though the water it lives in tends to be muddy! Freshwater bream are farmed and generally inexpensive.

Bream can be grilled, baked, fried or steamed. The sometimes slightly muddy taste of freshwater bream means that they do not work well when showcased in a recipe.

Fresh fish should be eaten on the day of purchase. If it is necessary to cook it the next day, place on a tray, wrap the container in cling film and store overnight in the coldest part of the fridge.
