Bok choy
Bok choy, which is also known as pak-choi, is possibly the most widely recognised Oriental vegetable. It has green spoon-like leaves on wide milky white stalks and is generally sold in two sizes, although in China many varieties are available.
Add bite-sized pieces of bok choy to mixed stir-fries, or cook with ginger, garlic and oyster sauce (add mushrooms if desired) for a versatile side dish for Chinese meals.
Place in a ventilated plastic bag - or wrap in kitchen paper - and store in the fridge for three or four days.
