Roux
A cooked mixture of butter and flour used to thicken sauces such as béchamel or soups and stews.

How to make

Melt butter in a pan until foaming, stir in an equal weight of flour, and cook stirring for about a minute. If you are making a white sauce, slowly add milk in small amounts and stir to required consistency.
