Rapeseed oil

Although fields of rape flowers exude a strong scent and give a distinctive, rather unpleasant taste to honey, the oil produced from the rape seed is very mild because it is highly refined and purified for culinary use.

The mild flavour of rapeseed means it can be used anywhere requiring a light oil taste, for example when frying Oriental dishes or desserts, where the taste of fruity olive oil would be too intrusive.

Light is the enemy of oil. Always keep oils away from sunlight, and preferably store them in a cool, dry cupboard.

Aim to use quickly, preferably within one year.
