Nori seaweed
Nori is the most recognisable variety of seaweed today as it is used to make the dark green sheets that envelope sushi.
Related to laver, nori is red or green when fresh. The red variety is commonly processed into dried sheets.

Unless purchased ready-toasted, nori should be toasted over a gas flame before use, which will make it turn very dark purple.

Use as is to roll sushi, or use scissors to cut it into fine strips and serve as a garnish on Japanese noodle dishes.
