• Mustard
Mustard is made from the seeds of white, yellow, brown or black mustard plant.

English Mustard is famously strong, made from just ground mustard seeds, water, salt and lemon juice. French Mustard, or Moutarde de Dijon, is made with vinegar and is slightly milder in flavour.
Use in cream sauces, salad dressings and flavoured butters. Mustard combines particularly well with honey or mayonnaise.

Whole mustard seeds can be fried in oil or ghee for vegetable dishes and curries.
