Milk
When people refer to milk today it is generally understood to mean cows' milk, however before the dairy industry was established, milk came mainly from sheep, goats, asses and even horses.
Cows' milk is an excellent source of complete protein.
Keep milk to hand for desserts, puddings, batters and custard, soups and chowders, bechamel and other white sauces, plus milky drinks. It is also used as a cooking medium for pork and smoked haddock.
Store fresh milk cold in the fridge and observe the manufacturer's use-by date. It can also be frozen for up to one month.
