The term vinegar means 'sour wine', though manufacturing a good one is more complicated than this implies. Malt vinegar, however, is derived from ale rather than wine and in medieval days was known as 'alegar'.
Most cooks think malt vinegar is too crude for salad dressings and sauces.

It is however a traditional accompaniment to British fish and chips, and its flavouring and preservative qualities are important in the preparation of pickles and chutneys.
