If you love fried food, it's worth investing in an electric deep-fat fryer. You'll have your family and friends queuing for your home-made chips.

Although deep-fat frying isn't considered the healthiest method of cooking, it can produce some of the most delicious food ever. You can rustle up perfect chips, light-as-a-feather tempura, crisp fried fish, golden samosas, and much more.

Electric deep-fat fryers are fitted with a built-in thermometer and a control panel. This is designed to prevent over-heating while allowing you to use the precise temperature needed for the type of food you're frying. Some models have built-in timers that remind you when the frying is done.

Deep-fat fryers come in different shapes and sizes. If you're a frequent fryer, go for the biggest you can afford, bearing in mind where you're going to keep it. A rectangular model makes efficient use of storage space and allows you to cook a whole fish without bending it.

Models with lids reduce grease spatters as well as the risk of flare-ups. Changeable filters help cut down on cooking smells, but you'll still have to turn on the extractor fan. The most convenient are fryers with dishwasher-proof removable parts. For safety, deep-fat fryers should have a stay-cool exterior.

Always follow the manufacturer's instructions. Be sure to change the oil regularly before it becomes rancid, and never be tempted to pour used oil down the sink - it might block the drains. If you have a compost heap, you can put the cooled oil on that, or, funnel the cooled oil into a disposable bottle, then throw away with your usual rubbish. If you're feeling particularly creative, save the fat to make up seed balls for the birds in your garden!
