Stuart Gillies
Executive chef, Stuart Gillies, combines New York-style cafe dining with locally sourced British produce in Ramsay's Boxwood Café.
After completing his City and Guilds apprenticeship at Crawley, Stuart worked in Stockholm, Rome and New York where his enthusiasm and passion for cooking grew. Stuart returned to London and worked as chef tournant in Aubergine, and as head chef at Teatro.
Before the Boxwood Café, Stuart spent a year as head chef alongside Angela Hartnett in her Michelin starred restaurant at The Connaught where he created modern Italian dishes from old French classics.
Stuart has featured on Masterchef Goes Large and Great British Menu and demonstrates regularly on food shows in the UK and abroad.
