I like to make savoury quiches with puff pastry, as my family do not like shortcrust much. However, I've not been very successful at baking the case blind a little before filling. Even if I use baking beans, my puff pastry still rises. Any suggestions to overcome this would be very much appreciated.

Hi Mail, thanks for your comments - here's Rachel Allen's simple shortcrust pastry to try http://uktv.co.uk/food/recipe/aid/607198 Eric Lanlard recommends that you use ingredients at room temperature, that you run the flour and butter together with your fingertips to make crumbs and let the crumbs fall from a height to get more air into them. When your dough is ready, cover and chill for at least 30 minutes - Eric Lanlard leaves his for an hour. Hope this helps to give you a few extra tips. Anna
