Recipes for Cold Beef

Anybody got ideas for recipes using cold cuts of beef?? I usually cook a large rib of beef on the bone as the Sunday roast and inevitably have some beef left.. Looking for tasty low fat recipes which utilise this for Monday supper??

Knives

I bought a selection of Global Knives from Selfridges and try very hard to sharpen them myself using a whetstone as recommended. This is not the easiest challenge on the planet so when I went back to the store to seek their advice they kindly offered free of charge to send them off to be professionally sharpened. Take note.......you should sharpen the knives regularly ie each time you use them ........a little and often approach will keep the blades razor sharp..BUT once blunt you will struggle.. if you didnt purchase your knives from Selfridges you may still be able to get the address of the company who will do this for you at a fee. otherwise if you have a friendly local butcher ....they may assist
Good Luck...
