Pickling Mushrooms

My apologies to Mrs Darcy, but I couldn't find "Start a New Topic"!

Has anyone got some advice on pickling mushrooms? I have just cooked and bottled 12 jars of mushrooms and put them in olive oil. I have searched on the internet and all the recipes and tips are different.

I picked one I liked which was boiling the mushrooms in wine vinegar, herbs and garlic, spread them on clean tea towels to dry them off for several hours and then bottled them in sterilised jars under olive oil. I am keeping them in the fridge and intend to keep them for about a month. Though I thought I had got all the air bubbles out, there are still some very tiny ones in the jar. Is this going to cause a problem? I am paranoid about botulism, though as I cleaned them scrupulously and they have been boiled in vinegar I can't see that there would be a problem. Are there any experts out there who can advise?
