Quince

We have many quince bushes in the garden [Provence] they also grow wild in the hedgerows. The french use it to make jam also a type of cake which is traditional to this area, both of which i find revolting.Does anyone have any recipes, ie chutney .At the moment we put them on the compost heap

Can some one tell what a ripe sloe looks like ie size flesh etc
the sloes around here seem small

Smoking Fish

Hello
find an old saucepan and lid [large] make a shelf near the top of the pan from an old bbq grid and you have a hot smoker. Place oak chippings in bottom of pan and put pan on gas ring when oak is smouldering turn heat as low as poss place fish on grid replace lid , fillet of trout will take 5 mins,We live in Provence so tend to eat outside all summer and we cook smoked fish at the table with a camping gas burner

fig chutney

Help
i live in the south of France and have a bumper crop of black figs this year. Has anyone got a good chutney recipe which will keep well when bottled.Also need recipe for green figs. One other question i am finding it hard to buy ALL SPICE is there an alternative. Thanks
