If sweetbreads,' was called 'Sheep's Testicles In A Sauce.' They would be less popular. The same goes for Edible Garden Pests. Certain of the French eat anything apparently, as long as it has a fancy name, including songbirds, which they probably call-: 'Chanson Oiseaux.'

One does get less cruel fare away from the tourist areas

I doubt it, as sweetbreads are the pancreas or thymus gland of a lamb or calf. Nowt to do with the testes.

The art of euphemism goes back a long way.

However there are various testicles on menus around the world. Where there is a male there will always be balls!

Lambs' testicles are called lambs' fries.
In Macclesfield,where I grew up in the mid 60's the UCP shop sold Pig's Hodge or Pig's Penis. If I had to, I'd rather eat hodge any day!!

On the subject of the French eating anything I remember being in Paris and going to a huge superstore near Disneyland Paris. My husband drew my attention (I wish he had not!!) to pigs testicles marinated in a jar. Being male he was all for taking them home to show his mates (must have something to do with the fact he was once a butcher). I could not believe people would eat such a ? delicacy.
