Ina Garten (Barefoot Contessa) did a recipe using Brisket, it was slow cooked for a few hours with carrots, onions, tomatoes it looked really good, see the link below for the recipe, you may want to reduce the qty's though as this recipe feeds 10-12 people

yummy I am actually preparing that particular cut but the salted variety this morning,well well what do you know an exciting formula to an old classic thank you:

Hi brisket does braise very well. you could go with a guiness braide brisket with champ style mash. If I do this i usually cut it into individual "chunks" 250-300g then tie to keep their shape. braise them in beef stock with onion carrots and celery guiness and a little brown sugar. The mash is with buttery spring onions, (I know its not authentic) and as a side veg i cook some onions real slow then add smoked streaky bacon and blanched kale. hope its of use.
