Help! My wife doesn't like bell peppers, any kind of peppers, in recipes which is a bit of a restriction in terms of colour, taste, texture , bulk etc. I currently use celery as a substitute. Is there a better one, particularly one that will giv e me the colour of peppers??

Substitute for red peppers.......red onion cut in wedges.
Tomatoes - either cherry left whole or larger ones cut into wedges. Put into dish towards the end of cooking so they remain recognisable.
For green peppers......green beans. asparagus. sugar snap beas, mange tout.
