I have just watched thie episode where the chef made the most delicious looking apple muffins, I didn't take the recipe down as I assumed it would be on the website how wrong I was could anyone help me out with the recipe please?

re Buttermilk...This used to be a by-product of butter making, hence its name, but now we have specially cultured buttermilk which is made by adding a culture to skimmed milk. It has the same acidic flavour as the original and is perfect for making extra-light scones, soda bread and American style pancakes.

You should be able to get buttermilk from the dairy section of the larger supermarkets. If not, just use ordinary milk.

You could make your own....

175ml ordinary milk
10ml vinegar or lemon juice

Add the vinegar or lemon juice to the milk, let stand a few minutes to sour.

Me too! Its soooo frustrating.

Do you happen to know the difference between buttermilk and pasturised? I know that's one ingredient from the recipe!

If I find the recipe, I'll sign post it to share with everyone.
