How do you you do your yorkshire puddings?

hi there just wondering if anyone had any advice on how the best way to make yorkshire pudding?
is a fan oven better than a gas oven?
do you really have to heat the fat first?
can you use oil instead of fat?
and do yorkshire puddings freeze well?
