Chilli Sauce. Help!!

Thread Starter: Ricky2    Started: Fri 15 Sep 2006    Replies: 6

A few weeks ago I had a dipping chilli sauce in a noodle bar in Edinburgh, where I live. I asked the guy who owns it what it was, and he said it was from Taiwan, but didn't offer me the name of it. I have been trying to get hold of it since then. It's uniqueness was that although reasonably spicey, it was more salty. I know that salt is a bit of a no no these days, but it was absolutely delicious. There are so many on the market, I don't know where to start. Anyone any ideas. Thanks.

sambal oelek might be similar if you thinned it with water or lime juice, and added a pinch of sugar, sambal oelek is a paste of pounded red chillies and salt, and can be found in most larger supermarkets

Ricky I reckon that two of the fundamental ingredients would be Thai fish sauce ( either Namh Pla or Nuoc cham) + palm sugar which together would approximate the taste you are looking for
