egg fried rice

hi, whatever i try i cant seem to make egg fried rice that even remotely resembles the rice you get from a chinese take away!! any ideas? - ive tried putting the egg in the pan first before the rice and vice versa. Both ways i seem to just get a stodgy mess!

Big Secret... Wash the rice REALLY well before you cook it. This gets rid of the starch so your rice doesn't get sticky when cooked. Now boil the rice for about 10 mins till "al dente" a bit of bite.
Now a bit of oil in the bottom of a wok, and gently fry a bunch of chopped spring onions, add the rice and stir fry till hot. Throw in a handful of peas as you are going. Then make a hole in the middle and add 2 beaten eggs, with a bit of seasoning and as they start to scramble stir them into the rice it should all be fairly dry. Lastly add a good drizzle of Soy sauce and stir in. Then enjoy.
This is the way my husbband does ours every Saturday night..it's a sort of tradition thing..

I re-heat cold rice in a little oil and some butter, adding left over peas and bits and pieces if I have them. If I haven't any left over onion I cook some finely chopped onion and add that. Then I make an omelette in the pan I cooked the onions in and roll it into a swiss roll shape and thinly slice it and toss that into the rice. I add soy and serve. It is always loverly!

I lightly beat my eggs with a little salt.Then lightly scramble them in oil in a preheated wok.Then I add my cold cooked rice carefully separting every grain followed by a little more salt to taste. Smile

That's what I do Nicci-I beat the egg with soy sauce and sesame oil and tou're right-it doesn't work with hot rice. I tend to put the rice in first with a spoonful of oil and then put the eggs in and let them set a little then srir until rice is coated and the egg is fully set-that's when the grains are separate and not all stuck together-I think it's at this point where people panic, but cook for a little longer and it turns out fine. Don't use too much oil though. Smile

Do you beat the eggs? I usually do this then add a little soy sauce and oil. Cook the eggs like scrambled eggs, when almost set add COLD cooked rice, spring onions (chopped), peas and whatever else you want to add. Hope this helps sarah. Big Grin
