i make this at work at least 2 times a month and they love it.
to feed 10 i cook 2 red cabbages. sliced thinly, in pan with 1 large chopped onion, 1 large, cored and peeled and diced cooking apple,a small handful of whole cloves, good dash of balsamic vinegar, 2 tsp sugar, salt and pepper to taste, knob of butter and 1/2 cup water, i throw the whole lot in pot, bring to the boil then i simmer gently for 2 hours, stirring continually till all the moisture is absorbed, you may want to adjust the sweet or sour taste a little till you get it just how you like it.It freezes well and is also not bad eaten cold so my ex mother in law tells me...Another ingredient i often add is lardons of bacon...
