Roasting Fennel

Can anyone tell me how to roast (or just cook) fennel? I have bought one today as I have only ever eaten it in restaurants and need some advice! Thanks!

Ben O'Donaghue has a wonderful recipe that I have tried from his "the best" series.

You need to go to the BBC website for the recipe due to copy rights, but well worth the effort

Just thought i would let you know that these were great. parboiled for 5mins then roasted with a drizzle of olive oil, some balsamic and some fine brown sugar... great!

Great Dangel. Thanks very much. Off home to try them out, going to stud them with garlic as my boyfriend has a cold - kill or cure!

It takes about an hour at the most. If you leave them in the quarters/eights it does take a time but keep an eye on them as they will suddenly go very quickly. However, if you wanted them quicker, then I suggest boiling them for five minutes and then roasting them and they will be done in under half an hour. DANGEL

Dangel - thanks for your tip. I am doing pollo milanese with spag napoli and broccoli, i saw the fennel and just fancied it! Going to do what you sugested, but is 1hr a little too long?

I normally cut into into quarters or eights (depending upon the size) and parboil them for a couple of minutes. Then I drain them well, place on a roasting tray, drizzle with olive oil and garlic and pop them into Gas 6 oven for up to an hour. I often add quartered peppers and courgettes as well. Yummy. I find fennel goes with grilled chops and/or fish. As my name normally does not come up I am DANGEL
