I AM NOT VERY COMPETENT WITH THIS IT ALWAYS TURNS OUT QUITE HEAVY

I know this is a bit of a late reply... but anyways... you can buy something called a "dough relaxer" from Lakelands Limited... just use that and the bread comes out much lighter!

Many reasons can cause this but easy to put right. If it is small and heavy you are not adding enough liquid 2nd the flour may be low in gluten or past it's sell by date. Failing thi try adding half a tablespoon more of a sweetner or decreasing the flour by 1 tblspoon. or increasing the yeast by a very small amount. Hope this helps.

I use a bread maker & it stresses the use of Easy Blend, Fast Action or Easy Bake yeast. 'Do not use fresh yeast that requires preliminary fermentation' it warns. I follow the ingredients' list carefully & have had excellent results every time for basic white, basic brown, 50% & 70% wholemeal & milkloaf.

Hello auntet my trouble shooter guide says that dense heavy bread is a result of either too much flour,not enough yeast or not enough sugar. What quantities do you use?

I use a bread maker and quick packet yeast.

If use the food mixer then knead by hand it is un-cutable.

I ahve used several receipes to no avail.

Do you have a breadmaker or do you make it by hand do you use fresh or dried yeast?? You might have to give us some more clues.
