Does anyone have the recipe for lemon chicken. We have it ar our local Chinese restaurant but I can't find a recipe for it.

Saundra, i have made lemon chicken many times. It is made with a lemon sauce. you can buy it at an oriental store. After you have marinated the chicken it has to be coated with a paste made out of flour and egg. the chicken then has to be fried. You carry on making the sauce and finely pour it over the drained chicken pieces.

With regards to karens comment on 7th feb, i must say that this recipe is absolutley brilliant for this dish, i also have this book and have made this dish this way a few times! it's wonderfull to do and the flavour's are juct like the chinese takeaway!

Well strangely enough karen, after I posted that someone told me that on one of the GFL shows last week ( sorry can't remember which) one of the chefs ( sorry can't remember which ) did say about using custard powder instead of cornflour to give good colour..........but see what you mean about the far flung provinces, maybe a question for Ken Hom next time he is on, but it could be that they use cornflour and saffron or turmeric or any other yellow colour? and this recipe was re written for us with cornershops.
Either that or we go on a "hunt the custard powder in China" trek.

LOL Rustie and Jennifer It does show a picture and the chicken does look yellow but so does the takeaway ones. However if it is in a recipe book then it must be true surely ?? My problem is that if it is authentic do the Chinese in the far flung provinces have local corner shops where they can get instant custard powder at a moments notice if they suddenly fancy apple pie and custard or trifle for afters (no offence to any chinese intended) or do they order it over the internet from a Britshoppe

Doesn't the custard powder make it look jaundiced??

Oh I do hope someone tries this.......but karen would it be Bird's custard powder?? I should think so cos it has the little yellow chicken on the pack doesn't it?? Just right for Lemon Chicken.

Hello Saundra I have a recipe book called The Encylopedia of International Cooking which has recipes from all over the world in it. It has a recipe supposedly from China for lemon chicken which says to rub the chicken with salt pepper and sugar mixed with chinese wine rice wine ( I assume you could use dry sherry) and then to steam for a while. When cool rub with instant custard powder (no I am not joking) brush with egg and deep fry.
To make the sauce mix lemon juice, white vinegar chicken stock,sugar and cornstarch and a few drops of yellow colouring and bring to boil check for seasoning and pour over cooked chicken using lemon slices to garnish,
Sounds just like the way a takeaway would do it don't you think. If you are brave enough to try it let me know as I love lemon chicken from the takeaway as well.

I have a recipe for lemon chicken by Ken Hom..I tried it out on my friends and they loved it. It's pretty long to write it all out and I'm not sure if you're still looking for it....but feel free to ask me if you need it.

i have only ever tried lemon chicken once ...my son was about 5 at the time ...and since that day whenever i say im going to cook...he nervously checks that im not repeating the expirience ...he is now 16...nad still asks ...was pretty awful though ...although i would never admit it to him ...lol
