help! have tried in vain to get hold of a small quantity of saltpetre to pickle some beef to make salt beef. all the chemists have said they can no longer supply it. any ideas where i can get some or is there any alternative ?

Karen, thanks for the source of saltpetre.

Bran Flakes, the recipe for Salt Beef looks great, will definitely try it. My own is rather pedestrian.

Glad I could help nannie. I have just been to the local butcher for tomorrows joint (nice rib of beef) and notice that they are taking orders for saltbeef for christmas. I might just be tempted!!

Nannie, and alternate recipe is as follows:
2 tsp black peppercorns
1 tsp allspice berries
2 tsp juniper berries
6 oz coxxxx sea salt
1/2 tsp powdered mace
1/2 tsp powdered clove
2 tsp dried thyme
8oz dark muscovado sugar
4-5 lb piece of brisket
Open out brisket, pat dry, add all above ingredients, after grinding berries etc, rub in well. Place in non-metal tray, cover, leave in cool place. Turn every day for 3-5 days. Remove meat, pat dry, roll and tie. Place in pan with onion, carrot, bouquet garni, cover with water, bring to boil and simmer for 30 mins per lb. Turn off heat and leave to cool. Remove from stock (makes a spicy soup), slice to serve, keeps for 1 week.

Hello Nannie someone has asked about this before. If you type in salt beef in the search bar and look in chat the topic is no 2. Apparently the Natural casing co do it and the phone no can be found on that thread.
