there's a company called natural casings that supply sausage casings and any equipment needed for sausage making.
otherwise if you own a kenwoodmixer they have an attachment for mincing meat and stuffing sausages.

Is it possible to make cheese i. e. cheddar type, on a small scale at home?

you would need to find a source of un-pasturised and un-treated milk to be able make good cheese. I am not sure what UK legislation is for making your own cheese either.[link]

saying that the one website i had seen www.cheesecraft.co.uk used to sell the equipment needed for home cheese making but the site is down and it might be that they no longer exist

I found that designasausage on 01663 766900 have the machines and all the goodies for making sausages. Even made Bratwurst last week - it was great for my friend who is on a gluten free diet!

Hi

I have got the gun and trigger type sausage maker. Bit like a silicone gun you would use in DIY. It also has another use. Put sushi rice in it and squeeze out a sausage of rice which is the perfect size for making very neat sushi.

by the way designasausage are now in macclesfield and have a shop, their new number is 0845 2578884. You can even get a kebab machine and make your own doner kebab!! Big Grin

Argos sell a good Anthony Worrall Thompson one for around £60. I've got it and it works a treat. I still have to buy the sausage casings online but they only take a day or so and last ages.

I recently bought a sausage machine from designasausage but my first attempt wasn't too great. I found I needed three hands! When I cooked them the skins came off, but they did keep their sausage shape. After all the effort my husband and son were not too enthusiastic about the finished sausage and declared them to be just ok. (I am veggie so didn't tast them) I had hoped for a better response after all the work. Does anybody have any tips before I put the machine to the back of the cupboard?

The sausages need to rest overnight before cooking. Also need to be cooked slowly or the skins come off. Don't give up - its just like baking a cake for the first time . Practice makes perfect and there are so many varieties to make. At least you know what is in the sausage and that is the most important Tongue

I did let them rest overnight and I cooked them very slowly. Reading the post yesterday reminded me that there were still some of the batch in the freezer so I cooked them last night. The skins did stick a bit better this time. I have ordered some pork and fat from the farm where I buy meat and he is going to mince it all together for me so that will eliminate the mincing job which I found very hard work. I thought I would add some leeks to the pork meat but do I blanch them first or just put them in chopped? Marie

Having a hand mincer is harder work - I have the Shark mincer which is electric and the sausages are so easy to make. My friend has a hand machine but gets the family to help and finds it a lot of fun!! I would blanch to leeks to be sure - but Designasausage have a sausage spice mix with leeks in it and this is really tasty and saves having to guess the quantities. Hope this helps!! Wink

I have tried everywhere to get veggie casings but without success. www.designasausage.com have a vegetarian kit with a crunchy coating instead of a casings but I haven't tried it yet. Wink
