wots the best way to roast veg? ive heard par boil first then add olive oil or put straight from fresh?? im really confused. i love roast veg... the more interesting the better.please help n wot with??

Roast Vegetables are the most quickest way and simple way to cook veg....
No need to pre cook.
Peel and cut veg into even sized chunks..
Drissle over olive oil, salt,pepper, (sprinkle dried chilli if you like to spice it up)
Cook 30mins 230C/450F gas mark 8, till tender and slightly charred. Smile

I put halved cherry tomatoes, deseeded and sliced peppers (any colour), onion and butternut squash in a pan with a drizzle of olive oil and garlic pepper, or you could just add some cloves of garlic with the skins still on which are very tasty when roasted and cook them on gas 4 until they're as "done" as you want them to be (stirring occasionally). I like that the tomatoes are quite squidgy as they release lovely juices (you could hold some back and put them in later in cooking if you want them to remain firmer). Lovely as a side dish.

Hi jay 28, I can't tell you the best way, only the way I do it.

I always par boil potatoes, sweet potatoes, parsnips, carrots and baby turnips and onions. But I don't par boil things like courgette, aubergine, tomatoes, mushrooms, baby leeks etc.

Personally I usually then toss the veg in some wholegrain mustard before adding to olive oil then pop in a hot oven. Towards the end of cooking I drizzle with honey.

Big Grin I'm with you 'Rosti', i like to put in tomatoes, but i put in any i have around, cherry or if normal size quarter them up. I usually put in butternut squash, onions ,peppers, and I have tried cauliflower brocolli and green french beans, a good way to use up anything leftover in the fridge!!! Wink
